Adorning its walls are black and white photos and Western artifacts.  Choice selections at Mark's Prime Rib include USDA slow roasted  Prime Rib cut to your liking, Tenderloin and Rib-eye steaks, and Steak and Mushroom casserole.

Chef Mark Biddle is an award-winning, progressive culinary professional with over 27 years of experience in the restaurant and hotel industry. As Executive Chef, he has brought his unique blend of creative flair and passion for food, strong business sense and engaging interpersonal skills to places like the world-famous Dorchester Hotel of London;  Holland's Chalet Lohengrin; and the Palazzo Versace Gold Coast, Hayman Island Great Barrier Reef and the Park Hyatt Canberra in his native Australia.

His wealth of experience in Restaurant Operations Management, Menu Design/Development, Resource Procurement/Inventory, Kitchen Design/Layout, and Training have led him to playing a pivotal role in the opening of a number of properties including the Hyatt Regency Sanctuary Cove, Palazzo Versace Hotel, Hyatt Hotel and Casino Manila and the Hyatt Regency Dongguan.  

Over the course of his career, Chef Mark has cooked for famous personalities like Sir Nelson Mandela, Rupert Murdoch of Fox News Corp., Keith Richards, and selected members of the Versace family.

Chef Mark's latest opening is Mark's Prime Rib, The City Club's exclusive steak house serving top quality USDA steaks and prime rib. Concurrently, he is also Balesin Island Club's Executive Chef and is responsible for the setup and running of all 7 themed villages based on luxurious world-famous beach destinations like Mykonos, St. Tropez, Phuket and Bali.
